Ingredients for Matcha Macarons:
– All-purpose flour: 42g
– Matcha powder: 3g
– Icing sugar: 45g
– Egg whites: 30g
– Granulated sugar: 30g
– Dark chocolate sauce: to taste
Instructions for Making Matcha Macarons:
1. Combine egg whites with granulated sugar, sit over hot water to melt the sugar, and whisk at high speed until stiff peaks form, able to hold a small, upright peak.
2. Sift all-purpose flour and cocoa powder once, then add icing sugar, and mix all materials before sifting twice.
3. Add a spoonful of egg whites to the flour and start mixing with a pressing and folding technique.
4. Initially, the mixing will be difficult, but gradually add more egg whites for a smoother mixture. Use a cutting and folding technique for the second addition of egg whites.
5. After mixing all the batter, it should form a fluffy consistency.
6. Transfer the batter into a piping bag.
7. Pipe batter of equal size onto a baking sheet, and dry in the oven at 50 degrees with the hot air function for 10 minutes. The skin should not stick to the touch.
8. Preheat the oven to 150 degrees, place in the middle rack, and bake with the hot air function for 15 minutes.
9. After cooling, remove from the oven.
10. The small ruffle at the bottom is quite charming.
