Golden Pillow Sponge Cake Recipe

Ingredients for Golden Pillow Sponge Cake: Eggs 4, Corn Oil 50g, Milk 70g, Cake Flour 90g, Corn Starch 10g, Milk Powder 15g, Baking Powder 2g, White Sugar 60g, Lemon Juice 4g, Unsalted Butter as needed, Almond Slices as needed.


Method:


Step 1: Separate 4 eggs, keeping the egg whites and yolks ready for use. Note: No yolk should be in the egg whites.


Step 2: Mix 50g of corn oil and 70g of milk until emulsified.


Step 3: Sift in 90g of cake flour, 10g of corn starch, 15g of milk powder, and 2g of baking powder, then mix well.


Step 4: Add 4 yolks.


Step 5: Stir until smooth and lump-free, then set aside.


Step 6: Beat 4 egg whites and 4g of lemon juice to create large fish-eye bubbles.


Step 7: Gradually add 60g of white sugar in three installments as the bubbles transition from coarse to medium to fine. Whip until a stiff peak forms when the beater is lifted.


Step 8: Fold in 1/3 of the meringue into the yolk mixture, mixing evenly.


Step 9: Add another 1/3 of the meringue into the yolk mixture, mixing evenly.


Step 10: Pour the entire mixture back into the meringue.


Step 11: Mix evenly.


Step 12: Line the bottom of a loaf pan with parchment paper.


Step 13: Pour the batter from a height.


Step 14: Draw circles in the batter with chopsticks, then tap twice to remove large air bubbles.


Step 15: Sprinkle with almond slices and add a line of softened unsalted butter in the center of the batter.


Step 16: Bake at 150°C for 45-50 minutes. Note: After the surface browns, cover with aluminum foil or a baking sheet to prevent over-browning.


Step 17: After baking, tap the mold twice to release steam, then invert to cool, which should take about 1-2 hours.


Step 18: Once cooled, use a cake releaser to demold.


Step 19: Cut into appropriate sizes.


Step 20: Golden Pillow Cake, completed O(∩_∩)O.


Step 21: The appearance is golden yellow, soft and elastic.
