How to Make Ai Cao Bing: Ingredient List and Cooking Steps

Ingredients for Ai Cao Bing: Ai Cao 500 grams (use a portion), White granulated sugar 30 grams, Glutinous rice flour 300 grams, Rice flour 200 grams, Baking soda 3 grams, Drinking water as needed.


Method for making Ai Cao Bing:


Step 1: Clean the Ai Cao and place it in a pot of boiling water.


Step 2: Add baking soda.


Step 3: Boil for 1 minute.


Step 4: Remove from the heat and place in a blender.


Step 5: Add a small amount of drinking water and blend into a paste.


Step 6: Take 1/5 of the paste and place it in a container, then add white granulated sugar.


Step 7: Add glutinous rice flour and rice flour.


Step 8: Stir until well combined.


Step 9: Ensure there is no dry flour left, cover with plastic wrap and let it rest for a while.


Step 10: Divide the mixture evenly into 50-gram portions of glutinous rice dough.


Step 11: I used a 50-gram mooncake mold, first coat the mold with a layer of glutinous rice flour.


Step 12: Place the dough into the mold and press firmly.


Step 13: Remove the mold.


Step 14: Place in a steamer.


Step 15: Steam for 15 minutes after the water comes to a boil.


Step 16: No filling is added, preserving the original flavor of Ai Cao, resulting in a fragrant, soft, and sticky texture.
